Corabel is a French variety distinguished by its large fruits and naturally sweet profile. Less oily than very melt-in-your-mouth varieties like Tonda Romana, it provides a more structured, less fluid texture, with a consistent and approachable mouthfeel. When raw, it evokes fresh hazelnut, cream, milk, and a slight natural sweetness. When roasted, it develops notes of blond biscuit, warm milk, sweet dried fruits, and lightly toasted cereals, without significant bitterness. Its size, aromatic roundness, and good hold make it a variety particularly suited for splinters, visible inclusions, decorations, smooth purees, and balanced pralines.
